About This Beer
Czech Pale Lager/Pilsner. Many of the hundred year old small breweries in Bohemia produce Pilsner lager, but they don't dare call it a Pilsner, as there is only one of those in the world. They call theirs "Světlý Ležák" or pale lager, and often leave them completely unfiltered. This beer is our first attempt at duplicating the flavors we experience when visiting, except that we refuse to use Saaz hops (too earthy). Instead, we used Riwaka, the daughter of Saaz and Nugget, grown in New Zealand. This gives some of the name noble qualities but also has brighter citrus notes without all the earthiness. The grist is 100% Bohemian malted barley, and the yeast is the H-strain from that brewery in Plzeň. This batch is completely unfiltered, and thus will appear slightly hazy from the yeast still in suspension, which provides a unique ester profile. Na zdraví!
